Baileys will be the most prominent flavour in this cheesecake, so if you want to change the main flavour of the cheesecake you could swap out the Baileys. If you’re worried about getting water on your cheesecake you can also run hot water over a clean tea towel and wrap it around the outside of the cake for a minute.

I like to use Digestive biscuits (Graham crackers if you're in the US) for the base, but you could substitute if for another similar biscuit like ginger nuts or Hobnobs. We’ve stirred the smoothest caramel into our original recipe and finished it off with a pinch of salt for a perfect sweet and salty mix that goes impossibly well over cake or a few ice cubes.Everyone will attempt to save room for this dark chocolate roulade with Bailey's cream, dusted with a snow drift of icing sugar, you’re sure to impress guests with this Christmas recipe. If you just don’t like the flavour of Baileys but still want a liqueur cheesecake feel free to substitute Baileys for another cream-based liqueur. With its mix of water, sugar and fat, cream cheese is the perfect breeding ground to harbour germs and bacteria which cause food poisoning. To decorate, chop the Baileys truffles in half and place them around the cheesecake on top of the whipped cream. I would also recommend that you check the packaging of everything you're using in the recipe in case of cross contamination. You can use either butter or baking spread for the biscuit base, I find that baking spread makes the cheesecake easier to remove from the tin as it doesn't make the base set as solidly.

However, dark chocolate has a higher melting point and lower fat content than milk and white chocolate, so if you use dark chocolate you will need to bear that in mind. However, you wouldn’t be able to adapt this recipe for a ketogenic diet as it is so reliant on sugar, alcohol and biscuits. If you can though, I think it is worth spending a little more for Philadelphia (and no they haven't paid me to say this! They are flavoured with just a hint of Baileys, which makes them the perfect after-dinner chocolates. To use, remove them from the freezer, place them uncovered on a plate and let them defrost at room temperature. Like all Chocolate Ripple cake recipes, there really isn’t too much involved putting this recipe together, do try to make it a few hours in advance (preferably at least 4 hours) as this will give the Baileys flavoured chocolate cream a chance to soak right into the chocolate ripple biscuits to create a lovely and soft texture.
