You will find the gin to be very aromatic and filled with rich flavors, making it a true delight for any gin lover. He learned some of this alchemy when researching gin before the establishment of the Three Fingers Distillery, the outfit that Randall’s investors helped fund as a logical expansion of the brewery. On a one-litre still, Matt tested the distilled qualities of 35 individual botanicals, immediately eliminating 15 of those and modifying the combinations and quantities of the remaining 20 to find the ultimate recipe for Three Fingers’ first spirit.

The brand is named after George Chinnery, the English painter, who began his career in Dublin, before travelling to China. The bottle is inspired by these two parts of his career – Georgian Dublin and Imperial China.

Gin and Juice

Hayman's Old Tom Gin is one of the best examples of this old-world style, though it was only recently launched in 2007. Produced by Hayman Distillers of Witham, England, it is based on a family recipe from the 1870s. Last week, locally-produced Wheadon’s Gin was showcased at the world premiere of The Guernsey Literary and Potato Peel Pie Society in London.

Matt Polli, who developed Blue Bottle gin, also said provenance was an important selling point. He is set to visit the US shortly to help launch the Guernsey-made gin there.

Apple & Thyme Twist

Technically, one could make gin in a matter of hours, but Blue Bottle settles in stainless steel for three weeks before bottling. According to Matt, “There’s some alchemy in storing the gin that I don’t completely understand. The flavours blend and develop much better in those tanks, not unlike a stew which usually tastes better the day after it’s made.” Hand-wrapped in paper, sealed with twine and wax, Ableforth’s Bathtub Gin is one of the more unique bottles on the market. Reminiscent of an old apothecary medicine bottle, its design takes inspiration from the prohibition era, said to have given rise to the term from which Bathtub Gin takes its name.

How We Met: I'll admit it. I was crushing on Gray Whale Gin long before ever trying the spirit, just after one look at that gorgeous blue bottle. I was already a fan of some other small-batch craft gins distilled in the U.S., but I was particularly intrigued by this gin's unconventional botanicals as well as the brand's incredibly rad, eco-friendly mission.
